Biscuits 3 cups self-rising flour 1/2 cup white shortening cold buttermilk to make the dough stick together Preheat oven to 375 F.
With your hands rub the shortening into the flour until mixture resembles fine cornmeal. Using a long-tined dinner fork stir in cold buttermilk until doughball follows fork. With floured hands lightly pinch off lumps of dough, roll into ball and flatten onto baking sheet; bake 8 - 12 minutes (until tops are golden). This recipe makes 18 small or 12 "cathead" biscuits.
You can use sweet milk , 1 Tbsp white vinegar in a 1-cup measure and fill with sweet milk will give an acceprtable substitute for buttermilk.
