Cinnamon Scones
8 ozs self-rising flour 1 1/2 oz margarine 2 oz caster sugar or soft brown sugar 1 tbsp cinnamon 1 8th cup milk a squeeze of lemon juice (few chopped dates, apricots, sultanas - anything that comes to hand)
Rub fat into flour, stir in sugar, cinnamon and fruit (if any). Add a squeeze of lemon juice to milk to sour it (makes scones rise better) and stir in to make dough. Place dough on floured board and flatten to about 1/2 inch with hand. Cut into rounds with scone cutter. Bake at gas mark 7 for 15 mins.
Just as delicious if allowed to get a few days old, toasted and coated thickly with butter.
