Date Scones
2 cups plain flour 3 tsp baking powder 1/4 cup butter (125g) 1 egg 1/4 cup milk 1/4 cup granulated sugar 1/4 cup chopped dates
Combine flour, baking powder, and sugar. Rub in butter. Mix through dates. Gradually add egg, then enough of the milk to form a moist but not gooey dough. Roll out until about 1/2 inch thick on lightly floured surface. Cut out scones of approximately 2 inches diameter. Place in a lightly greased cake tin, bake at 400F for 10-12 minutes until golden. Eat while warm.
For a darker colour, wholemeal flour can be used but this will not produce scones as light and flaky. You can also brush the tops of the scones before baking with milk.
