Sourdough Buns
Serves: 12

1 tbsp. dry yeast
1/3 cup sugar
1/2 tsp. salt
1 cup sourdough starter
5-1/2 cups flour
1/4 cup butter

Dissolve yeast in 2 cups lukewarm water in glass or plastic bowl.
Add sugar, salt, sourdough starter, and flour. Cover; let rise
until doubled in bulk. Roll out dough to 3/4-inch thickness. Cut
with biscuit cutter. Dip both sides in butter. Place on well-greased
baking pan. Let rise 15 minutes. Bake at 375 degrees for 20
minutes. Yield: 12 buns.


Sourdough Starter

1 tbsp. dry yeast
1/4 cup sugar
4 cups flour
4 cups water, lukewarm

Combine all ingredients in glass bowl. Do not use metal bowl.
Mix well. Cover with cloth. Let stand for 4 days, stirring daily.
Add 1 cup water and 1 cup flour to starter after a cup has been
used. Cover; let stand at room temperature. Stir daily to keep
starter active.
