Classic Dinner Rolls Yield: 16 Servings
18 oz flour 2 1/4 ts yeast 1/3 c sugar 1 ts salt 1 c milk 4 oz butter 3 lg egg yolks
Whisk together dry ingredients. Put in bowl of stand mixer with dough hook.
Heat milk and butter to 115F. to 125F.
Dump the warm milk-butter mixture and the egg yolks into the flour and mix on medium low to combine. Increase speed to medium high and beat until the dough is smooth and shiny, about 8 minutes.
Remove dough from bowl. Shape into a ball and return it to the bowl. Lightly grease the sides of the bowl and cover the top with plastic. Let rise in warm place until double in size, about 45 minutes.
Light grease a 9 X 13 baking dish. Turn the dough onto a clean work surface. The dough is soft but not sticky and press to deflate. Using a pastry scraper, divide the dough into 16 equal pieces, about 2 oz. each.
Form rolls, cover and let rise until about double, about 30 minutes.
Heat oven to 375F. Bake about 20 minutes until golden.
