Injera with Teff

1-1/2 lbs. teff flour 6 cups water 2 packages yeast
Sift the flour into a large bowl. Add water and mix with fingers until smooth. In another large bowl mix the yeast with a little warm water, then add the flour mixture and mix well. Cover and let it ferment for 2-3 days until the water rises to the top. Carefully discard the water. Then boil 2 more cups of water in a saucepan, and add 1 cup of the teff mixture. Put it over medium heat and stir continuosly until it becomes thick. Mix it back in with the rest of the teff mixture. Add more water until it is smooth, then cover and let stand until it rises again. Then proceed to cook as you would normally cook injera.
