Oatmeal Bread
2 pkgs yeast 1/2 cup warm water 1 1/4 cup boiling water 1 cup oatmeal 1/2 cup molasses 1/3 cup butter
1 salt 5 3/4 cups all-purpose flour 2 beaten eggs 1 egg white beaten with 1 T water
Soften yeast in water. Combine boiling water, molasses, butter and salt. cool to luke warm. Stir in two cups flour, beat well. add yeast and 2 beaten eggs. Stir in enough of the remaining flour to make a soft dough, turn out on a floured surface and knead for 8-10 minutes.
Let raise until double (1 1/2 hours). Punch down and divide in two, form into loaves and place into two well-greased 8 1/2 X 4 1/2 X 2 1/2 pans. Raise to double, brush tops with egg white /water mixture and sprinkle some oatmeal on tops. Bake at 375 F about 40 minutes. You may want to cover tops with a foil tent to prevent over-browning.
