Orange Rolls
2 packages dry yeast 1/2 cup water 1/2 cup milk 1/2 cup sugar 1 teaspoon salt 2 eggs, beaten 1/2 cup butter 4 1/2 to 5 cups flour
3 tablespoons butter, softened 1 tablespoon orange zest 2 tablespoons orange juice 1 1/2 cups icing sugar
Proof yeast in water for 10 minutes. Combine with milk, sugar, salt, eggs, butter and enough flour to form a soft dough. Knead for 10 minutes or until dough is smooth. Oil a bowl. Put dough in bowl, turning, so that all sides of dough is oiled. Cover with a tea towel, set in a warm place and let rise until doubled in bulk. Punch down dough. Roll out into 12 x 7-inch rectangle.
Beat together butter, zest, juice, and icing sugar. Spread 1/2 of filling and frosting over dough. Roll up and cut into 12 slices. Place in greased 9-inch round cake pan. Let rise until doubled. Bake at 375 degrees F for 25 to 30 minutes. While warm frost with remaining frosting. Makes 1 dozen orange rolls.
