WHEAT BREAD

3 large shredded wheat biscuits
1 Tbsp. salt
3 Tbsp. butter
3 cups boiling water
1/3 cup sugar
1/2 cup molasses
8 cups unbleached flour
2 Tbs yeast

In a large bowl, crumble 3 large shredded wheat biscuits. Add the
next three ingredients. Stir until the butter melts. Stir in the
sugar and molasses. Set aside and cool to lukewarm.

Sprinkle 2 Tbsp. yeast over 1/3 cup warm water and let proof for
5 minutes. Pour yeast mixture into the cooled mixture above and
stir well.

Stir in the flour a little at a time.

Knead the dough for 10 minutes, adding more flour as needed. (Dough
should be fairly sticky.) Put dough in greased bowl, cover, and
let rise till doubled (approx. 1-1/2 hours). Punch down and form
into 2 or 3 loaves. Place in greased loaf pans and let rise 45
minutes.

Bake at 400F for 15 minutes and then at 350F for 30 minutes more.
