Spinach Pie Bread

1 C 112 degree F water
1 T yeast
1 T honey

1-2 sliced onions
1 pkg sliced mushrooms
1 clove to 1 head garlic, peeled and chopped
10 oz pkg frozen chopped spinach (drained) (or use fresh)
feta, mozzerella, cheddar, ricotta cheese, optional

Combine water, yeast and honey in a large bowl or mixer bowl with
dough hook. Let sit until frothy. Add enough flour to make a nice
dough (see many other recipes on how to make bread dough). Set it
aside to rise.

Saute onions, mushrooms and garlic in white wine. Add spinach.
Cook until liquid is gone.

Roll out risen dough on floured surface to a large rectangle about
1/2 inch thick. Spread spinach mixture on the dough leaving some
space in the edges so it won't leak out. Optionally add some
cheese. Feta, mozzerella, cheddar, ricotta.

Roll up the dough. Brush with a beaten egg before baking if desired.
Transfer to cookie sheet sprinkled with corn meal and bake for
about 40 min. or until well browned on bottom
