White Bread
6 cups scalded milk 2 pkgs. yeast dissolved in 1/3 cup water and 1 tsp. sugar 6 Tbsp. melted shortening (lard and butter) 1/2 cup sugar flour 1 cup water 3 - 4 tsp. salt
Cool milk to lukewarm. Add yeast and salt and sugar. Stir in enough flour until consistency of flour paste. Beat hard with electric mixer. Let stand until little bubbles appear on surface. Add melted shortening. Continue adding flour and stir by hand until firm enough to put on well floured board and knead. Knead with hands about 4 - 5 minutes, until dough holds together but isn't stiff.
Place in greased bowl. Cover and let rise in warm place. Turn on floured board and knead down. Let rise again. Turn onto floured board, knead and shape into loaves. Let rise. Bake 325F to 350F 45 Min. Turn our of pan. Butter top of bread - Cool.
