Biscuits Gravy 12

Hamburger Gravy
1 lb. hamburger 1 tsp. Worcestershire 3 cups milk, plus 2 tablespoons, divided demiglace or bouillon salt and pepper to taste 1 Tablespoon cornstarch hot sauce (optional)
Brown the hamburger in a skillet. Drain off any excess fat. Add Worcestershire, 3 cups of milk, and 3 teaspoons of the demiglace. Bring mixture to a boil. Taste and add more milk or demiglace as needed. Add salt and/or pepper and hot sauce* to taste. When the gravy tastes right, make a slurry of cornstarch and milk (the amount of cornstarch depends on how much thickening the gravy needs. 1 tablespoon cornstarch and 2 tablespoons milk is a good place to start) and add to the gravy, stirring vigorously to combine. Bring mixture to a boil and stir continuously as the gravy thickens. Serve hot over biscuits.
