Breakfast Burrito, Wyoming
Had this at a mom and pop diner in the middle of nowhere in Wyoming. It is well worth the work. They are large, we usually split them.
Ingredients:
Little pig sausages or bacon (side dish, 1 serving per person)
(Sausage Gravy)
1/4 lb. Ground sausage
Flour
Milk
Salt and pepper
(Burrito Filling)
Butter or Margarine (1/2 Tbsp per burrito)
Eggs (2 per burrito)
Western style hash brown potatoes (1/2 c. per burrito)
Enough cooking oil to fry hash browns
Shredded cheddar cheese (2 Tbsp. per burrito)
Large Flour Tortillas, Warmed (1/2 to 1 per person)
Prep work: (1-3 steps at once, 3 pans)
1)Heat enough cooking oil to heavily cover the bottom of a pan. Put hash browns in covered pan and fry until soft and golden brown in places. Salt and pepper to taste. (we add some diced onion)
2)At the same time, cook a serving of sausages or bacon for each person to your liking.
3)Brown ground sausage for sausage gravy.
Drain hash browns and bacon or sausage links on paper towels.
4)When ground sausage is browned, add a few table spoons of flour to ground sausage pan. stir to absorb grease adding more flour if necessary. (Add a little of the grease from the bacon/sausage pan if the ground sausage is too dry. It only takes a couple of tablespoons to make a bunch of thickener) Stir constantly until flour starts to brown (tan color). Add a little milk and stir well. Heat to low boil, adding milk as it cooks to keep it a thick gravy. Salt and pepper to taste, reduce heat and keep hot.
5)Make scrambled eggs (a 1/2 tsp. butter/marg.. in a pan for each egg, add eggs and stir) salt and pepper to taste. Mix in hash browns with eggs.
Assembly:
Place a warmed tortilla on a plate. Spoon the hash brown/egg filling on the middle. Fold the sides over the center. Cover with hot sausage gravy. Sprinkle cheddar cheese on the top. Serve with a side of bacon or sausages.
