This is Excellent for picky kids who only will eat cold cereal

4 oz. Neufchatel cheese, softened
1 tbsp. confectioners' sugar
1 pt. fresh raspberries, rinsed and patted dry
1 cup chopped fresh peaches
8 slices Pepperidge FarmŽ Honey Oat Natural Whole Grain Bread
1 cup cholesterol-free egg substitute
1 cup fat-free milk
1 tsp. vanilla extract
Vegetable cooking spray
1 cup maple syrup


Directions:
1. MIX cheese, sugar, 1/2 cup raspberries and 1/2 cup peaches. Spread cheese mixture on 4 bread slices. Top with remaining bread slices.

2. MIX egg substitute, milk and vanilla in 2-qt. shallow baking dish. Dip sandwiches into egg mixture, soaking well and turning to coat.

3. SPRAY nonstick skillet with cooking spray and heat over medium heat 1 min. Place sandwiches in skillet.

4. COOK sandwiches until lightly browned on both sides and cheese is melted. Remove sandwiches and place on 4 plates. Cut each sandwich diagonally in half. Divide remaining fruit among plates. Serve with syrup. Serves 4.
