Bananas Foster 4 firm ripe bananas 1/4 C (1/2 stick) unsalted butter 1 C packed light brown sugar 1/2 t cinnamon 1/4 C banana flavored liqueur 1/4 C rum 4 scoops of vanilla ice cream Peel the bananas and cut in half. Slice each half lengthwise into quarters.
In a large skillet, melt the butter over medium heat. Add the sugar, cinnamon, and banana liqueur, if desired, and cook, stirring frequentley, for about 2 minutes, or until bubbly. Add the bananas and cook, turning once, for about 2 minutes, or until slightly softened and browned. Remove the skillet from the heat.
In a small saucepan, heat the rum over low heat. Carefully light the rum using a long fireplace match. Pour the flaming rum over the bananas and sauce. Allow the sauce to flame until it dies out, swirling th pan gently to prolong the flaming.
Scoop the ice cream into shallow dessert bowls and spoon the bananas and warm sauce on top. Serves 4.
