CAJUN SPICE BLEND

1/4 Teaspoon black pepper
1/4 Teaspoon white pepper
1/4 Teaspoon red(cayenne) pepper
1/4 Teaspoon garlic powder
1/4 Teaspoon paprika
1/4 Teaspoon salt


CAJUN SAUCE

2 Tablespoons margarine
2 Tablespoons flour
1 Cup milk
3/4 Teaspoon spice blend

Make a standard white sauce from the flour, margarine and milk.
Stir in the spice.

I used the cajun spices with a blackened trout recipe. I brushed the filets with olive oil, then sprinkled the fish with the cajun spice. I placed afthe fish in a very hot, smoking, iron skillet for 2-3 minutes on each side and dribbled the fish with a small amount of melted butter while cooking. Delicious!
