Serves 6 or 8.
2 Tbsp. butter
2 Tbsp. flour
1 cup milk, warmed
1/2 doz. hard boiled eggs
1/2 cup green pepper, chopped fine
1/2 cup celery, chopped fine
1/2 cup onions, chopped fine
1 can tomatoes
1 can sm. mushrooms
1 Tbsp. butter
Saute pepper, celery, onion in butter until tender (20 minutes).
Add tomatoes, cook a little. Mix white sauce, mushrooms and cooked
vegetables in casserole with sliced eggs, sprinkle with buttered
bread crumbs and bake 350F until hot.
Melt the butter then whisk in the flour, gradually whisk in the
milk, making sure to whisk well to prevent lumps. Let it come to
a boil and boil until as thick as you want it.
