Frogmore Stew
1 lb. link pork sausage 3 lbs. new potatoes, halved beer 1 large sweet onion 1 diced bell pepper 3 chopped ribs celery 3-4 Tbs. seafood seasoning (Old Bay or Tony Cachere's, or crab boil mix 6 fresh blue crabs (optional) 6 ears corn on the cob, cut into pieces 3 lbs. unpeeled fresh shrimp In a stock pot boil about 7 minutes link pork sausage (they use homemade sausage down there in Frogmore, SC), and new potatoes, covered in water and beer. Add onion and a bell pepper, celery, and seafood seasoning Boil for 10 minutes. fresh blue crabs and corn on the cob. Boil 10 minutes. Add shrimp. Boil 3 minutes until shrimp are pink. Remove from heat and let stand 5 minutes. Drain the lot and serve - here you can dump it out on the table on newspaper and you need a bucket in the middle of the table for the shrimp and crab shells and corn cobs. Pass additional seafood seasoning, Tabasco, cocktail sauce, whatever.
