Low Fat Seafood Gumbo

1 cup green bell pepper, chopped
1/2 cup onion, chopped
1 tablespoon canola oil
1 tablespoon cornstarch
14 1/2 ounces stewed red ripe tomatoes (cajun style)
6 ounces tomato juice (hot style)
1 cup frozen okra, cut up
8 ounces package frozen shrimp, peeled and cooked
4 ounces packaged crab flavored, flake style fish
3/4 cup quick-cooking rice

In a large pot cook bell pepper and onion in hot oil till tender,
stir in cornstarch. Add undrained tomatoes and tomato juice all
at once. Cook and stir till bubbly; add okra. Bring mixture to
boiling; reduce heat. Cover; simmer 10 minutes. Stir in shrimp,
crab flavored fish, uncooked rice, and 1 1/4 cups water. Return
mixture to boiling. Remove from heat. Cover and let stand about
5 minutes or till rice is tender, stirring occasionally. Yield 7
cups (4 main dish servings).
