Poor Man's Jambalaya
4 small whole bay leaves 1 t salt 1 t try mustard 1 t cayenne pepper 1 t gumbo file powder 1/2 t ground cumin 1/2 black pepper 1/2 t thyme 4 T margarine 6 smoked ham, diced 6 oz smoked sausage or kielbassa 1 1/2 C chopped onion 1 C chopped green pepper 1 1/2 t minced garlic 2 C uncooked rice (converted) 4 C beef, pork or chicken stock
Combine spices in a small bowl and set aside. In a large heavy (preferably cast iron) skillet, melt margarine over high heat. Add ham and sausage, cook 5 minutes, stirring occasionally. Add onions, celery, bell peppers, spices and garlic. Stir and cook until brown, about 10-12 minutes, stirring and scraping the bottom. Stir in rice and cook 5 minutes, stirring and scrapping. Add the stock, stir well. Bring mixture to boil, reduce heat and simmer until rice is tender but still crunchy, about 20 minutes, stirring occasionally. Remove bay leaves and serve immediately.
