Creole Jambalaya
3 lb fryer 1 cup flour 1 tablespoon salt 1/4 cup olive oil 1 cup uncooked rice 1 med. onion, chopped 2 tablespoons olive oil 1 large can tomatoes 2 tablespoons chili powder Red & black pepper to taste
Cut chicken into frying pieces. Coat by placing into a Ziploc bag with flour and salt. Brown in olive oil and place in a 3-quart casserole with tight fitting cover.
Brown uncooked rice, garlic, and onion in the pan which the chicken was browned, using the additional olive oil. Add tomatoes, additional salt, chili powder, red and black pepper. Pour over chicken. Cover and bake in a 350 degree for 75 minutes.
Note: Can also be simmered in a frying pan covered for 60 minutes. Be sure to stir occasionally to avoid sticking. Add water if too dry!
