Jambalaya
serves 4

1 or 2 big onions, finely chopped
2 or more cloves of garlic, finely chopped
butter
rice for 4 people
200g diced chicken
200g sausage, chopped (chorizo or salami, but any spicy sausage will do)
2 tsp cayenne pepper
pepper
salt
1 pt / 500ml chicken stock

Fry the onions and the garlic, add the chicken, fry it for 5 minutes,
add the sausage, fry for a minute, add the chicken stock. Season,
add cayenne pepper to taste, and bring it to a boil. Add the rice
and let it boil until the rice is done.
