Boiled Fruitcake

BOILED CHOCOLATE FRUIT CAKE
1 cup sugar
2 beaten eggs
4 ozs butter
1 tsp lemon essence
1 cup black tea
1 1/2 cups flour
1 Tbs cocoa
1 tsp baking powder
1 Tbs coffee essence or instant coffee
1 tsp mixed spice
2 cups mixed dried fruit
1 tsp baking soda
Boil sugar, butter, tea, coffee and fruit for 5 minutes, add soda
and let cool. Add other ingredients and bake 1 hour in moderate
oven. Ice with lemon butter icing when cold.
