Chocolate Pudding 05

Cocoa Pudding Cake
1 c all-purpose flour
3/4 c sugar
2 T cocoa powder
2 t baking powder
1/2 t salt
1/2 c skim milk
2 T oil
1 t vanilla
3/4 c brown sugar
1/4 c cocoa powder
1 3/4 c hot water
Sift together flour, sugar, 2 T cocoa powder, baking powder, and
salt. Add milk, oil and vanilla. Mix by hand until smooth. Pour
into 8x8x2" pan sprayed w/nonstick spray.
Combine brown sugar, 1/4 c cocoa powder and water. Pour gently
over batter.
Bake at 350 degrees for approx 45 minutes. You need to let it cool
completely so the "pudding" thickens on bottom.
