RICH DARK CHOCOLATE CAKE
1 3/4 cups flour
2 cups sugar
3/4 cup cocoa powder
2 tsp soda
1 tsp baking powder
1 tsp salt
1/2 cup oil
2 eggs, slightly beaten
1 cup cold strong black coffee
1 cup buttermilk or sour milk
1 tsp vanilla
Combine dry ingredients. Add remaining ingredients. Stir together
then beat at medium speed of mixer for two minutes. Batter will
be thin. Bake at 350 for 40 to 45 minutes (until top springs back).
Very dark, rich, and moist and best served with whipped topping
rather than frosting.
