SPECIAL CAKE
1 1/4 c. sugar
2 c. cake flour
1 tsp. soda
1/2 c. soft shortening
1 c. buttermilk
3 heaping Tbsp. cocoa, mixed with water to make a paste
1 egg, beaten
1 tsp. vanilla
Sift first 3 ingredients together. Mix together shortening and
buttermilk, add dry ingredients. Beat at No. 2 speed for 2 minutes.
Add cocoa mixture, egg and vanilla. Beat at No. 2 speed for 2
minutes. Bake in 325 f oven for 25 minutes. Cool and frost. Makes
2 - 8" layers.
Notes: No. 2 speed is for electric mixer. This is a rather slow
speed.
One must follow the directions to the letter or the cake won't turn
out right.
