Chocolate Cupcakes
3 cups flour
1 3/4 to 2 cups sugar
1/2 cup cocoa
1 teaspoon salt
2 teaspoon soda
2/3 cup oil
2 cup water
2 tablespoons vinegar
2 teaspoon vanilla
8 oz cream cheese
1 egg
1/3 cup sugar
1/4 teaspoon salt
6 oz chocolate chips
Combine and sift dry ingredients. Add oil, water, vinegar and
vanilla. Beat until smooth. Fill cupcake papers 2/3 full. Beat
cream cheese, egg, sugar and salt until fluffy. Fold in chips.
Drop 1 heaping teaspoon of filling into each cupcake. Bake 25
minutes at 350 F. (180 C) Frost when cool if desired.
