SEARCH RECIPES: LOCATION: Recipes >> Cakes Chocolate >> Flourless Chocolate 08    Flourless Chocolate 08 Flourless Chocolate Espresso Cake Servings: 12 3 10-ounce frozen raspberries in syrup, thawed 12 ounces semi sweet chocolate, chopped 4 ounces unsweetened chocolate, chopped 1 pound unsalted butter, diced 1 cup espresso 1 cup brown sugar, packed 8 eggs Puree raspberries in processor. Chill. Preheat oven to 350 degrees. Line bottom of 9" pan with parchment paper. Place all chocolate in large bowl. Bring butter, espresso (regular or instant dissolved in 1 cup water) and sugar to boil in medium saucepan, stirring to dissolve sugar. Add to chocolate; whisk until smooth. Cool slightly. Whisk in eggs. Pour batter into pan. Place cake pan in roasting pan. Pour enough not water to come half way up sides of cake pan. Bake until center of cake is set and tester inserted comes out clean with a few moist crumbs attached, about 1 hour. Remove from water. Chill cake overnight. Serve with sauce. Since he would not share his recipe, I have been searching and searching for a recipe that would be close, and I found it with this one. I had a hint from the waiter though. He told me it is "flourless." wow I couldn't believe it. It is an absolutely heavenly, melt-in-your mouth, creamy, decadent, chocolatey masterpiece! Simple to make. I used a 10" round pan for the recipe, and baked it in a 14" round cake pan half filled with water as the recipe suggests. (I used to make wedding cakes, so have all these pans) I also used jumbo size eggs. That is the secret to fantastic recipes. Don't mess around with dinky eggs. You'll be amazed what jumbo eggs can do with any recipe. The cake baked up beautiful and even - absolutely lovely. I envisioned pouring a glaze of reaspberries, strawberries or even orange would really top this off. A drizzle of any flavor of glaze across a pretty plate, a square of this cake and a dollop of whip cream with some curls of chocolate will amaze your company. Although the cake was perfect all by itself. Trust me, folks. I am a baking expert and this one will work for anyone. Try this one! Fantastic!!!
