Fudge Cake
Serves 8

3 ounces unsweetened baking chocolate
1 cup plus 2 Tbsp granulated sugar
6 Tbsp butter, softened
3/4 tsp. salt
3/4 tsp. baking soda
3/4 tsp. Vanilla Extract
2 large eggs
1 1/4 cups flour
1/2 cup milk

Melt chocolate with 1/3 cup water according to package directions.
Stir until smooth. Let cool to lukewarm.

Meanwhile heat oven to 350F. Grease an 8 1/4 inch by 4 1/2 inch
loaf pan; line the bottom with parchment or waxed paper.

Put sugar, butter, salt, baking soda and vanilla in a medium bowl.
Beat with mixer on high speed until well blended. (Mixture won't
be creamy.) Add 1 egg; beat until creamy, pale and fluffy. Beat
in other egg.

Reduce mixer speed to medium and beat in 1/2 the flour, then 1/2
the milk. Beat in remaining flour and milk, then chocolate until
blended. Scrape into prepared pan.

Bake 60 to 65 minutes until a wooden pick inserted in center of
cake comes out clean. Cool cake in pan on wire rack 5 minutes.
Run a knife around the cake, invert onto rack, peel off paper and
let cake cool completely.
