HAWAIIAN COFFEE CAKE

3/4 cup butter
3/4 cup brown sugar
3/4 cup granulated sugar
3 eggs

1 tsp salt
1 tsp vanilla
1/2 tsp baking soda
1 oz. Hawaiian coffee liqueur (or any coffee liqueur
2 oz. softened chocolate (semi-sweet)

3/4 cup milk
3-1/2 cups flour
3 tsp baking powder
1/2 cup shredded coconut

Cream together butter and sugars. Beat in eggs. Add salt, vanilla,
soda, liquer, and chocolate.

Add in milk and then flour beating alternately. Beat for 3 minutes.
Add baking powder. Beat 30 seconds. Add coconut.

Bake at 350 F. for 45 minutes, Makes a 9x13 cake or bake 30 minutes
for
regular layer cake.


ICING

3 Tbsp butter (softened)
2 cups powdered sugar (add more if too soft)
1 oz. rum or Coffee Liqueur
1-1/2 oz. heavy cream

Blend and beat for 3 minutes.
