Mashed Potato

Chocolate Mashed Potato Cake
2 cups sifted flour
2 tsps baking powder
1 tsps cinnamon
1 tsps nutmeg
1 cup soft margarine
2 cups sugar
4 eggs
1 1/2 squares un-sweetened chocolate
1 cup unseasoned mashed potatoes
1 cup cold coffee
1 tsp vanilla
1 cup chopped nuts
Mix the flour, baking powder, cinnamon, nutmeg, margarine and sugar
and add eggs (beaten) one at a time. Add the melted squares of
unsweetened chocolate and let cool. Blend in the mashed potatoes,
cold coffee and vanilla. Beat thoroughly and add the chopped nuts.
Grease and flour two 9" layer cake pans. Pour in ingredients and
bake in a 350 degree overn for 30 minutes or until done.

cake.
