Sauerkraut Cake

2/3 cup butter or margarine
1 1/2 cups sugar
3 eggs
1 teaspoon vanilla
1/2 cup unsweetened cocoa
2 1/4 cups sifted all-purpose flour
1 teaspoon baking powder
1 teaspoon soda
1/4 teaspoon salt
1 cup water
2/3 cup rinsed, drained and chopped sauerkraut

Cream shortening and sugar. Beat in eggs and vanilla. Sift dry
ingredients and add alternately with water to egg mixture. Stir
in thoroughly rinsed and chopped sauerkraut. Grease and flour 8
inch square or round pans. Bake at 350 for 30 minutes or until
done.


May frost or leave unfrosted. A cream cheese frosting is good:

Cream Cheese Frosting

1/2 cup butter or margarine
1 box confectioners' sugar
1 tsp. vanilla
1 or 2 Tbsp. milk

Beat butter with sugar and vanilla. Add milk to bring to spreading
consistency.
