SPICED CHOCOLATE CAKE

100g butter
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp mixed spice
1/2 cup buttermilk
1 1/2 cups brown sugar
2 eggs
1 tsp baking powder
1/2 cup instant chocolate drink
1 tsp cinnamon
1/4 tsp ground nutmeg

Cream butter and sugar until light and fluffy. Beat eggs and
vanilla together. Add in small quantities to creamed mixture,
beaten well after each addition, Sift together the dry ingredients.
Add to the creamed mixture alternately with the buttermilk. Spoon
into a prepared 20cm cake tin and bake at 180C 40 - 45 minutes or
until cooked when tested. Cool in cake rack and ice when cool.


ICING

1 cup icing sugar
2 tsp cocoa
1 tsp butter
1 1/2 Tbs boiling water
1/4 tsp rum essence

Place icing sugar, cocoa and butter in a bowl. Pour over the
boiling water and essence. Mix to spreading consistency.
