Dark Chocolate Frosting

1/2 cup Valhrona cocoa powder
1/2 cup Valhrona bittersweet chocolate, chopped (or El Rey or Scharffenburger)
8 oz mascarpone cheese
12 oz whipping cream
powdered sugar to taste

Heat 6 oz of the cream to just below boiling, and pour over the
chopped chocolate. let sit 5 minutes, then stir until smooth. In
a large bowl, combine the cheese, remaining whipping cream, cocoa,
and chocolate mixture. Whip on med-high until thick and creamy,
adding powdered sugar to sweeten to your taste. Whip in small
bursts, and check often, It should be thick and smooth. It will
thicken more upon chilling. Be careful not to over beat.
