APPLE CAKE WITH FROSTING
1 1/2 cups vegetable oil
2 cups sugar
3 eggs
3 cups flour
1 1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
3 cups chopped apples
1 cup pecans
1 tsp vanilla
1 cup coconut (optional)
Beat oil, sugar and eggs together in a bowl. Add rest of ingredients
and beat well. Pour into a greased 13x9 inch baking pan and bake
at 350 degrees for 55-60 minutes. Frost cake when slightly cooled.
FROSTING:
1/2 cup butter
1/2 tsp salt
1 cup firmly packed brown sugar
2 tbs evaporated milk
Place in saucepan and heat to melt butter and dissolve sugar. Add
confectioner's sugar to mixture to thicken to desired spreading
consistency.
