Apple 13

Apple Cake
Servings: 18
3 c flour
2 c sugar
1 c oil
1 t baking soda
1 t salt
2 t vanilla
3 eggs
3 c apples
1 c walnuts
1/2 c raisins
powdered sugar
Preheat oven to 325. Grease well and flour 2 8" square pans (or
1 9"x13"). Chop raisins, peel and dice apples. In large bowl with
mixer at low speed, mix well first 7 ingredients, constantly scraping
bowl. Beat 3 more minutes, occasionally scraping bowl. Stir in
apples, nuts and raisins. Spread in pans. Bake 1 hour. Cool on
wire racks. Place paper doily on each cake; sprinkle with powdered
sugar; remove doilies.
