Apple Cake
1 1/2 cups oil
2 cups sugar
2 eggs
4 cups apples, peeled, sliced
1/2 cup raisins, (optional)
2 teaspoons cinnamon
2 teaspoons vanilla extract
1 1/2 teaspoons salt
1 1/2 teaspoons baking soda
3 cups flour
Preheat oven to 325 F. Grease 2 9x5 loaf pans or 1 tube pan.
Blend ingredients in listed order until thoroughly moistened. Do
not overmix. Pour batter into pans. Bake for 1 hour and 15 minutes.
