Apple Cake

3 cups peeled, chopped apples
1 cup sugar
1/4 cup cooking oil
1 egg, beaten
1 cup unsifted all-purpose flour
1 tsp. cinnamon

1/2 tsp. nutmeg
1 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla
3/4 cup chopped walnuts or pecans

Mix apples and sugar; let stand 30 minutes. Add oil and beaten
egg. Blend. Mix and sift all dry ingredients three times. Stir
into apple mixture. Add vanilla and walnuts. Turn into a well-greased
and floured 8-inch square pan. Bake at 350 degrees for 45 to 50
minutes. When done, cake springs back when pressed lightly with
finger. Serve with Cool Whip or ice cream. May be frosted if
preferred.
