Applesauce Cake

2 1/2 cups flour
2 cups sugar
1 cup raisins
1/2 cup walnuts or pecans, chopped
1/2 cup butter
1 1/2 cups applesauce
1/2 cup water
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/4 teaspoon baking powder
1 1/2 teaspoons baking soda
2 eggs

Heat oven to 350. Grease and flour rectangular pan, 13x9x2, or 2
round pans, 8 x 9 x 1 1/2.

Cream butter and sugar together. Add other ingredients except
raisins and nuts and beat on low speed , scraping bowl constantly,
30 seconds. Beat on high speed, scraping bowl constantly, 3 minutes.
Fold in nuts and raisins.

Bake 60 to 65 minutes for rectangle, 50 to 55 minutes for round
layers. Cool and frost if desired.


CREAM CHEESE FROSTING

8 oz cream cheese, softened
1 tablespoon milk
1 teaspoon vanilla
4 cups powdered sugar

Beat cream cheese, milk and vanilla in 2 1/2 quart bowl on low
speed until smooth. Gradually beat in powdered sugar, 1 cup at a
time, until smooth and of spreading consistency. Frosts a 13X9
inch cake or fills and frosts two 8 or 9 inch layers.
