BANANA COCONUT CAKE
1 1/2 cup sugar
1/2 cup shortening
2 cup flour
3/4 tsp. baking soda
1/2 tsp. salt
1/3 cup buttermilk
1 cup mashed bananas
1 tsp. lemon juice
3 Tbsp. butter
3/4 cup brown sugar
1 cup coconut
3 Tbsp. milk
1 egg
nuts (if desired)
Cream sugar and shortening. Add dry ingredients alternately with
creamed mixture. Add buttermilk, bananas and lemon juice. Bake at
350 degrees for 30 minutes.
Topping: Mix and put on warm cake under broiler for a few minutes.
