Banana Walnut Cake

1 1/4 cup sugar
1/2 cup veg oil
2 eggs
2 mashed bananas (very ripe)
1 1/2 teaspoon vanilla
1 cup buttermilk or sour milk
1 teaspoon baking soda
2 cups flour
1 teaspoon baking powder
1 cup finely chopped walnuts

Mix everything in the same bowl (using a whisk to make smooth).
Bake in a 9X13 inch pan (greased) at 350F for 35 minutes or until
the top is brown and springs back when touched.

This cake is quite sweet and does not need a frosting

To make sour milk, put a tablespoon of vinegar in a cup of milk.
