BANANA CAKE
2 1/4 cup sifted flour
1 1/4 cup sugar
2 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup butter, softened
1 1/2 cup mashed, ripened bananas
2 eggs
1 tsp. vanilla
Mix the flour, sugar, baking powder, baking soda and salt; sift
together in large bowl. Add softened butter, 1/2 cup mashed bananas
and the eggs. Beat 2 mins. Add remaining bananas and vanilla. Beat
1 minute. Bake 375 degrees, in 2 well greased 8" round cake pans,
for 25 min.
Cream Cheese Icing
1/2 pound powdered sugar, sifted
1/4 cup butter, softened
8 ounces cream cheese, softened
1 teaspoon vanilla
Beat together well all ingredients. Spread on cooled cake.
