BANANA CAKE
4 ozs butter
6 ozs sugar
2 eggs
2 mashed bananas
1 tsp baking soda
2 Tbs boiling milk
1 tsp baking powder
8 ozs flour
Cream butter and sugar, add eggs, mashed bananas, then baking soda
dissolved in boiling milk. Lastly add flour and baking powder
sifted together. Bake in two sandwich tins for 20 minutes at 350F.
Fill with whipped or mock cream.
Mock Cream Filling
2 Tbs butter
2 Tbs sugar
2 Tbs boiling water
Put all in a basin and beat with a beater until thick like cream.
Vanilla may be added. If the mixture looks like it's curdling, just
keep beating. It will go smooth.
