Banana Cake
2 1/4 cups flour
1 1/4 cups sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups mashed bananas
2 eggs
1 teaspoon vanilla
Mix together the flour, sugar, baking powder, baking soda and salt.
Sift into large mixing bowl. Add softened butter, 1/2 cup bananas
and eggs. Beat 2 minute. Add remaining bananas and vanilla. Beat
one minute. Bake in 2 well-greased 8" round cake pans at 375 degrees
for 25 minutes. Frost with cream cheese frosting.
Cream Cheese Icing
1/2 pound powdered sugar, sifted
1/4 cup butter, softened
8 ounces cream cheese, softened
1 teaspoon vanilla
Beat together well, all ingredients. Spread on cooled cake.
