Carrot Cake
2 cups flour
2 cups brown sugar
3 tsp cinnamon
2 tsp baking soda
1 cup chopped walnuts
4 eggs
1 tsp salt
1 cup oil
3 cups grated carrot
Mix all dry ingredients together in bowl. Add 1 cup oil and beaten
eggs then grated carrot and walnuts. Mix well. Pour into baking
tin. Bake in moderate oven for 1 hour.
Icing
100gm cream cheese
50 gm butter
1 tsp vanilla essence
2 cups icing sugar
Combine.
