Carrot Cake

2 cups finely grated carrots
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 teaspoon nutmeg
3 eggs
1/2 cup vegetable oil
1 cup granulated sugar
1 cup raisins or chopped walnuts

Mix all ingredients together and bake until a toothpick inserted
comes out clean--roughly 50 minutes--in a preheated 350 F (gasmark
4) oven.

I generally accompany this with a white icing.
