Carrot Cake

1 1/2 cups flour
1 1/4 cups sugar
1 1/2 teaspoons soda
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
2 small jars strained baby food carrots
2/3 cup oil
1/2 teaspoon vanilla
2 eggs
8 ounces crushed pineapple, drained
2/3 cup coconut
1/2 cup walnuts, chopped

Mix everything but flour, pineapple, nuts and coconut. By hand
stir in in remaining ingredients. Bake at 350 degrees for 40-45
minutes. Frost with the following frosting:

Frosting: 1/2 cup butter, 8 ounces softened cream cheese, 1 tsp.
vanilla and 1 pound of powdered sugar. Mix and spread on cake.
