Carrot Cake
1 1/2 cup corn oil
2 cups sugar
3 eggs
1 1/2 cup (about 2 large or 3 medium) grated carrots
2 cup flour
2 t baking soda
2 t salt
1 t cinnamon
1 t allspice
1 t vanilla
1 T cornstarch
3/4 cup chopped walnuts
Mix all ingredients until blended. pour into wax-paper lined 9x13"
pan. Bake at 350 degrees for 50 minutes. Cool. Frost.
Cream Cheese Icing
6 oz butter
8 oz cream cheese
2 c powdered sugar
1/2 t vanilla
1 t lemon juice
Cream butter and cream cheese. Beat in remaining ingredients until
fluffy.
