CARROT CAKE

2 cups sugar
3/4 cup oil
4 eggs (1 x 1 )
2 cups flour
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 lb grated carrots
1/2 cup raisins or nuts

1/4 cup margarine
4 oz cream cheese
l 1/2 to 2 cups

Mix together sugar and oil, and add the eggs beating in one at
a time. Then add flour, baking powder, baking soda, cinnamon Mix
in grated carrots (add 1/2 cup raisins or nuts if wanted) Place
into 1 tube pan or 2 loaf pans (greased and floured). Bake at 350F
for 1 hour.

Cream cheese icing: Beat 1/4 cup margarine with 4 oz cream cheese.
Add confectioners sugar until desired consistency. Refrigerate
cake afterwards.
