CARROT CAKE

4 eggs
2 cup sugar
3 cup grated carrots
2 cup self rising flour
1 1/2 cup vegetable oil Wesson
2 tsp. cinnamon
1 cup chopped pecans

1 box confectioner's sugar
1/2 cup chopped pecans(optional)
1 8 oz. package cream cheese,softened
1 stick butter,softened
2 tsp. vanilla

Blend sugar and oil. Add eggs, one at a time. Add flour,
carrots, cinnamon and nuts. Mix thoroughly. Pour into greased
and floured pan. Bake at 350F for 30-35 minutes.

Cream butter and cheese. Add sugar, one cup at a time. Add nuts
and vanilla. Mix well.
